My sister came on Sunday for a quick visit and she always makes the best food or have ideas to new recipes. Ever since she was little she has always cooked for me, when I came home from school she used to make scrambled eggs and she was only around 8 years old. That’s definitely something I need to teach little A from a young age. My sister also loves making gourmet food with my dad and I don’t think she ever makes anything that I don’t like. The first day she was here she made salmon and spinach wholegrain lasagne and yesterday we had a meatfree Monday with chickpea steaks and healthy chocolate mousse. I started on my no sugar diet again last weekend and until now I haven’t had any sugar cravings at all. I’m trying to stick to avoiding products with more than 5% sugar so have also cut out any fruit juices, but even in vegetable juice there is usually more than 5% sugar.

 Here is the recipe for my meatfree Monday:

The chickpea steaks consisted of two cans of chickpeas, two grated carrots, one grated onion, 3 garlic cloves, a bit of feta cheese, chopped parsley and coriander, one egg and 2dl of flour. Our side dish was carrots, parsnips, courgettes, sweet potatoes in avocado oil with garlic and chilli. I usually leave them in the oven for around 45 minutes. For dessert we had sugar free chocolate mousse made of avocado (around one avocado to one person), almond milk, a dash of agave syrup and cocoa powder. I added a bit of clotted cream and mint on top. You couldn’t taste that it didn’t have any sugar in it at all.

Usually on Mondays I make a dish named by my dad as ‘Monday pasta” which consists of Portobello mushrooms, tomatoes, courgettes, red pepper, chillies, garlic and fresh basil. I always make my own pesto from pine nuts, fresh basil, parmesan cheese, garlic and salt and pepper. It is an easy dish and on Mondays I never feel like cooking for too long.

 My sister just went back today and tomorrow it is my mom’s turn to come and visit. She has a suitcase packed with goodies from back home. My mom is staying until the end of the weekend and then we have a few days free before my dad arrives. It’s great to have visitors, but also a bit tight in our small London flat. I felt that a lot this morning when little A woke us up around 5. If she would have had her own room I have an idea of that we would sleep much better. Hopefully sometime next year we are able to move and get more space depending on if that will be in London or Copenhagen. Only time will tell.
