HEALTHY BANANA DATE CAKE





 
 






































 
 
 
I try to stay away from sugar as much as I can and therefore don’t really eat any cakes. I found this recipe on  Louises madblog and thought it was a great option for making cakes without any sugar. Dates are really sweet, and mixing them with  bananas makes it the perfect sweet treat. It was really easy to make, besides from my blender breaking for the fourth time. I have tried to buy the better and more expensive brands, but none of them seem to last that long.
 Ingredients:
100 g dark chocolate (could be sugarfree)
150 g dates
100 g hazelnuts and 100 g almonds
2 bananas
2 eggs
1ts baking powder
 a pinch of salt
 
Chop the chocolate and 50 g hazelnuts and place it in a bowl
Blend the remaining nuts in a blender and add it to the bowl
Add the baking powder and salt in the bowl
Blend the dates, bananas and eggs (this is where my blender stopped working so I mashed it instead)
Add it to the other ingredients and blend it all together
Add it into a saucepan with baking paper
Bake it on 180 C for 25 minutes
 
It tastes great both warm and cold and I added cream one day and crème fraiche the day after.
 
My next baking project will probably be scones. One of my colleagues just baked some for breakfast this morning and we had them with strawberry jam and clotted cream.
